Metodo Classico Cavarè - Cavallero Vini

Tentè, from Piedmontese dialect to try, to experiment. This wine, produced with Baratuciat grape – rare Piedmontese variety which has been recently rediscovered – comes from our desire to test new plans and challenges.
The vineyard was planted in 2018 in S. Giorgio Scarampi, a small village at 500 metres above sea level and 2021 harvest is our first production.

Type: Monferrato D.O.C. White

Grape variety: 100% Baratuciat

Altitude: 500m above the sea level

Soil: loam-silt-clay

Harvest: second half of September

Vinification: the grapes are handly selected and picked in 20 kilos baskets. After their arrival in the cellar, the grapes are destemmed and crushed before low-temperature maceration. This lasts about 12 hours, followed by racking, decanting and alcoholic fermentation. After fermentation, the wine rests for some months “sur lie” before its bottling and sale.
