Grape Variety: Pinot Nero and Chardonnay

Altitude: 520 m above sea level on S.Giorgio Scarampi hills

Soil: marly and limy, typical of Alta Langa area

Vinification: the grapes are selected and harvested by hand and transferred into 20 kilos crates, then they are softly pressed and ferment in steel tanks. The free-run juice rests on its fine lees until the following spring, then the prise de mousse takes place for two months at 15 degrees.

Refinement: in bottle sur lie at steady temperature and humidity for at least 30 months.

Dosage: Extra brut

Organoleptic characteristics: straw-yellow colour, fine and persistent perlage, white flowers and yeast bouquet. It is dry and tasty.
